These granola-bars are perfect for traveling and so delicious. I like to pack them into my backpack when ever I am about to travel, just wrapped into soy wax paper and you're ready.
Ingredients for 12 bars:
120g almonds
100g peanuts
80g oats
20g puffed amaranth
10g coconut sugar
80g maple syrup
1 tablespoon vanilla extract
2 tablespoon lemon juice
50g coconut oil
1 pinch of salt
Directions:
1. Chop cranberries, almonds and peanuts roughly and mix with oats and amaranth.
2. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
3. Mix maple syrup with coconut sugar, vanilla extract, lemon juice and boil it on medium heat for 5 minutes.
4. Take the hot mixture from the heat and mix with coconut oil.
5. Combine oat-nut-mixture with warm coconut oil mixture and stir well.
6. Place all of the oat mixture on the prepared backing tray and form a 20 x 20 cm square. Use a rubber spatula or the bottom of a greased measuring cup to press the mixture onto the tray.
7. Chill the granola bars for at least 2 hours. Lift the bars from the tray using the edges of the parchment paper and place them on a cutting board. Cut into desired shape/sizes and serve.
Tip: For different variations you can also use walnuts, hazelnuts, chia seeds, dried fruits or vegan chocolate.
